It's a hot summer day here in Minnesota and when I get back from taking the kids to the pool the first thing I'm going to do is whip up one of these smoothies. It's got enough protein to keep me going until dinner and after not having dairy for two years, it's fooled me into almost believing it's actually a chocolate shake. In fact I'm going to make a crazy claim and call this a Paleo Wendy's frosty. Plus, after adjusting goggles for four hours and enthusiastically responding to 57 "Mom! Watch this!" cries from the pool, I deserve a treat.
When I first read about putting an avocado in a smoothie I thought it sounded disgusting. And then I tried it. Happy to be proved wrong on that one! The avocado in this smoothie makes it creamy and amazing. The frozen avocado makes the texture the closest thing to ice cream a paleo girl can get. If you are in a pinch you can use a room temp avocado but it won't be quite as creamy. I buy a bag of avocados and just scoop them out into little baggies when they are ripe and put them in the freezer. Then I always have a stash on hand.
- 1 frozen avocado
- 12 oz. almond milk
- 2 tablespoons sun butter (or any nut butter of your choice)
- 1 tablespoon high quality cocoa powder
- stevia (or maple syrup, honey, agave) to taste
- Put everything in blender and get excited!
- Add more almond milk or ice as needed for texture
It's a perfect afternoon to treat yo' self to a paleo frosty! Double the thing and the fam will thank you. And once fall comes we'll just have to think of some more reasons for smoothies.
