This is not intended to be a fancy food photo. Because I’m not eating fancy food these days. For the past 3 and a half months, I’ve been eating 25 foods. Just 25 foods. The same 25 foods. Nothing else, not even flavored La Croix. The 25 foods are things like chicken, carrots, brussel sprouts, rice, apples, parsley and flax. Yep, parsley counts as one of my 25 foods. So does mint and dry mustard and pepper. It’s all because of some very in-depth testing I’ve had done through @lplarson (friend, functional nutritionist, all-around amazing person). She found out that even though I had been eating gluten, dairy and egg free for years, I still had tons of inflammation and was super reactive to some of the “healthy foods” I was eating (like lemon and almonds and a bunch of other things! What?!).
She’s helping me through the long and tedious process of healing my gut and reducing inflammation and hopefully reducing my cluster headaches and migraines along the way. I’m not going to lie, it’s real work. I have to bring my own food everywhere, I have to eat the same things over and over, it’s a lot of prep and lots of planning. I didn’t go out to eat for over three months! I can’t just eat things that are gluten-free or dairy-free, it’s about every single ingredient. But Leann has been right with me every step of the way. At the beginning it was SUPER hard to not be able to eat the things that were my “treats” even though to most people I was really restricted already. One day I literally prayed, “Dear Jesus, you turned water into wine. I believe you can make these carrots taste like chocolate! I believe!” Unfortunately that didn’t happen. But I’m starting to add things back slowly and I am savoring each new ingredient I get to add.
It hasn’t been an overnight fix, but I am hopeful and have seen a few bright spots of relief. I know it’s a really slow process that just takes time and work. I really can’t recommend Leann highly enough.
