Chocolate Chip Cookies

I am not exaggerating when I say that I could not have survived the last two year of my life without these cookies. With a year of not being able to eat eggs, I had to find another way to make a cookie! I found a few recipes that almost worked for my dietary restrictions, but not quite. So I combined a few of those recipes and changed some ingredients to make it work for me. These cookies are grain free, egg free and dairy free. I think they are easier to make than "normal" chocolate chip cookies. And guess what… since there's no eggs, you can dig in and take a taste of the dough!

I've always had a thing for soup, and if it's honest with itself I think soup has probably always had a thing for me. I know that soup is not typical summer fare, but this soup is too good to only eat when it's cold outside. It's fresh and easy and a great way to take advantage of the summer veggies. So head to the farmer's market and pick up a lovely bulb of fennel or wait until your CSA box is overflowing with summer squash (you know it will happen) and use it in this soup!

I came up with this recipe when I couldn’t eat eggs (for a year!). Of course I couldn’t go without sweets or chocolate for a year so something had to be done. This recipe started as a zucchini bread but evolved into this yummy dense cake as I played around with the recipe. Think flourless chocolate cake, but really good for you.
